I go through breakfast phases where I find something I love and then eat it everyday for weeks. I was on a wheat bagel with cinnamon butter kick, but I was looking to decrease my morning carbs and increase my dairy intake.
See, I have a serious problem with milk. I hate it. I haven't drank a glass of milk since I was a baby, and I don't think I ever will again. I do my best to eat cheese and broccoli, and other foods full of calcium, but as I get older, I get worried that it isn't enough.
I slowly began incorporating yogurt into my diet, and while I like it, it just wasn't something that I got real excited about eating, until I discovered these parfaits! I love these. They are filling, delicious, and healthy. While these don't truly taste like cookies, they have all my favorite cookie ingredients, chocolate chips, oatmeal, and peanut butter.
This is definitely my new favorite breakfast, but it also makes a great snack in between lunch and dinner. This is easily adjustable to your own tastes, so play around with the flavors until you find something you love!
I have tried this two ways. I prefer the taste of the first recipe I am going to post, but the second is healthier and has much less sugar. If you haven't tried PB2 Powdered Peanut Butter yet, I recommend it! It is great for adding the flavor of peanut butter, but not the fat. It is great in smoothies, too!
Greek Yogurt Cookie Batter Parfaits
Recipe 1:
Ingredients:
3/4 cup or 6 oz. Fat Free Greek Vanilla Yogurt
1 tbsp. mini chocolate chips
1 tsp. vanilla extract
2 tbsp. quick oats
1 tbsp. reduced fat peanut butter, such as Jiff Whips
a big dash of cinnamon
Recipe 2:
Ingredients:
3/4 cup or 6 oz. Fat Free Plain Greek Yogurt
1 tbsp. agave nectar or honey
1 tsp. vanilla extract
2 tbsp. quick oats
1 tbsp. reduced fat peanut butter or PB2 Powdered Peanut Butter
a big dash of cinnamon
For either recipe, measure out your yogurt and then add in all the ingredients. Stir well. Freeze for 15 minutes, which gives the parfait time to stiffen and allows the oatmeal to soak up some of the yogurt. Don't skip the freeze time. This makes the parfait have a great texture!
