Day 8 of the 12 Days of Christmas: Gingerbread Skillit Roll

     Hi everyone, I am Carlee from Cooking with Carlee.   If there is one thing I love, it is the holidays.  And sweets.  But mostly holidays!  I love getting everyone together and I loooooove the excuse to make the most delicious foods for everyone to share.  We have been really enjoying making giant skillet cinnamon rolls this year.  It is so much fun being able to cut a nice slice and eat it layer by layer.  
    This gingerbread skillet roll is perfect for your Christmas breakfast.  It is full of classic Christmas flavor.  The roll itself is loaded with perfect gingerbread spice.  The molasses adds a nice color and just the right amount of deep flavor.  The cinnamon, ginger, nutmeg and cloves wake your tastebuds right up and the eggnog glaze adds just enough creamy dreamy gooey yumminess to the top.  
     Besides the fact that the roll tastes like Christmas, it has another thing going for it.  It is so easy a two year old can make it! For those of you who don't know us, my little guy LOVES to help in the kitchen.  
This was no exception.  I offer direction and he does most of the work!  It is a perfect arrangement.
You can assemble everything the night before.  Then all you have to do Christmas morning is set it out to rise while you open presents.  Then 30 minutes in the oven and a quick glaze later you are ready to eat warm, spicy, sweet, wonderful breakfast. 
     You can certainly use this recipe to make a 9x13" pan of individual cinnamon rolls as well, but we just love making one big cinnamon roll to share.  It is so much fun to peel off each layer of your slice.  I also really enjoy making them.  They make quite a fun presentation for people who have never seen such a big cinnamon roll!  We have tried a pumpkin roll with maple glaze, a strawberries and cream roll and a traditional cinnamon roll and all have been gobbled up as quickly as they were made. 
Gingerbread Skillet Roll with Egg Nog Glaze
makes 1 12" cinnamon roll 

Ingredients:
3 cups all purpose flour
1 cup whole wheat flour
1 T yeast
1/4 cup brown sugar
1 cup milk, warmed
3 T butter
1 egg
1 tsp salt
1/3 cup molasses
1 tsp vanilla extract
1 tsp cinnamon
1 tsp ground ginger
1/2 tsp ground cloves
1/4 tsp freshly grated nutmeg
5 T butter, melted
1/2 cup brown sugar
1 T cinnamon
1 tsp ground ginger
1 cup powdered sugar
3 T egg nog
1.Mix the flour, sugar, salt, spices and yeast in your mixer bowl.  Add warm milk, butter and egg.  Mix until completely combined.  

2. Scrape down sides, then attach your dough hook.  Allow it to work the dough on low for five minutes.
3.Transfer dough into a greased bowl and cover.  Let rise in a warm place until doubled in size, about an hour.  The dough is ready when you touch it and the indent stays down.

4.Pat out into a 13 x 20" square on a floured surface.

5. Mix together melted butter, brown sugar, cinnamon and ginger.  Spread over dough.  Cut into two inch strips.
6. Roll the first strip and place in the center of a greased 12" cast iron skillet.  Add the rest of the strips in circles around the center.  You don't want to roll them too tightly, you want there to be a little room for them to rise and fill the pan.

7.Let dough rise to double again.  You can let it rise on the counter for another hour, or in the fridge overnight. (If you place it in the fridge, but sure to pull it out in plenty of time to come to room temperature and finish rising in the morning)

8. Bake at 350 F for 30 minutes

9. Mix together powdered sugar, and egg nog.  Drizzle glaze over hot roll.

10.Allow to cool slightly, but it is best served while still warm.
