Chicken Teriyaki Stir Fry

Well hello there!

How was your weekend? I hope it was fabulous!

Mine was pretty darn special. I had a great time with my kids Saturday and then Saturday night.

Then my mom, let me sneak off so my husband and I could see
Vanilla Ice Live!

Rob was very laid back and seemed to be a real humble guy.
He is actually from the Dallas area. 
And his mom lives in the town I live in.
Whoop, whoop!

Also, it was his birthday and he celebrated with his fans!

Ok, enough gawking over this neat-o celebrity.

Onto my yummy dish!

You will need:

1 lbs. Boneless Chicken Thighs
(has to be thighs as breast meat dries out)



1 bag of  Frozen Asian/Stir Fry Vegetables

1 Fried Rice Seasoning Packet

Teriyaki Sauce

1 1/2 cups of white rice

2 Eggs


Cut the chicken into chunks and marinate for at least 4 hours in the teriyaki sauce.


I used about 1/3 of the bottle and then stored the chicken in a gallon size baggie and placed in the fridge.


After the 4 hour marination process, cook the chicken on medium until it is a nice brown color.


While the chicken is cooking, cook the rice.

Add the rice to a skillet, add a few dashes of vegetable oil or olive oil and cook on medium till slightly brown.



Add in the Fried Rice Seasoning. 


And add 3 cups of water.



Let cook between medium to low and cover with lid.

Check on it continuously until it is nice and fluffy.




Scramble the eggs.


Make a nice size hole in the middle of the rice, and add in the eggs.


Cook and scramble the eggs till cooked in the center of the rice and then stir the rice and egg together.

I'm a little lazy, so I stick the whole bag of frozen veggies into the microwave and steam them for 
7-8 , minutes. Be careful its super hot when removing.


Add a little more teriyaki sauce and cook on low while all the other food is cooking.

 Finish cooking the rice on low for an additional 10 minutes stirring the rice and egg all together.

When it's all done, place the rice first on the plate, then the veggies, and then the chicken.

You now have your own slice of heaven!
