Easy Tri-Colored Veggie Pasta Salad

Well Hello! How has your summer been going?
Ready to have some guest over for a BBQ?
If so this is a must have side dish.
Really this pasta salad is good for any type of occasion any type of year.
I've made it for birthdays, baby showers, wedding showers, family reunions, bachelor party, and other get togethers.

It's super quick and cheap and feeds an army. Okay maybe not the whole entire army
{insert giggles}.

I am really sorry I didn't take pictures of the cooking process. After I made it I thought hmm, I think I'll do a post on it.

So what will you need?

12 oz. Tri-colored Rotini pasta
18 oz. of Italian Dressing
14 oz. frozen Broccoli cuts
14 oz. frozen crinkle cut Carrots
12 oz can of dark red kidney beans
1/2 cup grated Parmesan cheese

Boil the pasta, per the directions.

While waiting for that to cook, I place my broccoli cuts in the microwave to steam them. If they are completely frozen I steam them for about 3 minutes, as you still want them cold.

Do the same for the frozen carrots.

Drain the juice from the kidney beans and wash them until the water is clear.

When your pasta is cooked, drain and rinse with cold water until the pasta no longer feels hot.

Place in a very big bowl, and add the veggies and beans, the whole 18 oz bottle of Italian dressing and the 1/2 cup of Parmesan cheese.

For some extra taste, add green or black olives. I personally don't like them though.

And that really is it!

Chill in the frig for at least 2 before your party.

I try and cook mine the night before and place it in a baggie on its side in the refrigerator over night so the Italian dressing marinates all over the pasta instead of just draining to the bottom.

Thanks so much for tuning in!
Until Next Time...

  4. This pasta salad looks delicious. That's a great tip about putting it in a bag on its side to avoid all the dressing settling in the bottom of the bowl. Pinned to my salads board. Thanks for partying with us at Snickerdoodle Sunday.
