Well Hello Beauties! How was your weekend?
I'm sad and happy at the same time today.
My kiddo's go back to school tomorrow. I'm excited to get their minds moving again, and okay, maybe I'm a little excited too I get my sanity back as well.
Okay, I'm a lot excited. But I am a little sad its back to waking up extra early to get them ready, as well as myself too every single weekday, bleh!
Hopefully my friend will join me tomorrow morning for our annual first day back to school breakfast celebration! Sssh, don't tell the kids!
Ok, so anyway, today I wanted to share my Pasta Salad recipe. I love it, the hubby loves it, and best of all my kids love it. I mean if a kid wants to eat it, it must be really good Great!
I didn't take preparation photo's but eh,
you really don't need it for this.
What you'll need:
3 Roma tomatoes
1 bushel of Cilantro
3/4 Onion
1 can of corn
1 can of black beans
2 garlic cloves
1 box of Tri-color Rotini Pasta
1 cup of Italian dressing
Boil your water and cook your pasta.
While that's cooking dice your tomatoes, onions and cilantro.
If you like your cilantro finer use a food processor or mini chopper.
Drain your corn, and black beans.
Thoroughly rinse your black beans.
When your pasta is cooked, then drain the water and rinse the pasta with cold water, until the pasta is no longer hot to touch.
Then place the pasta in a large (and I mean LARGE) bowl and add add your vegetables (including the corn and beans).
Then using a garlic press, press each clove into the bowl.
(if you don't have a press, finely chop it).
Then add your 1 cup of Italian dressing and let it chill for about 2 hours.
If you intend on cooking it earlier and letting it chill for longer than 2 hours, you will need to add another cup (8oz.) of Italian dressing, as the pasta will soak most of it up.
The great thing about this pasta is that you're getting your vegetables as well.
