Ultimate Nachos



As I sit here, about to dive into writing this post, I am so hungry just looking at the picture of these super delicious nachos.

If you've ever eaten the Mucho Nachos at Taco Bueno and LOVED them, then you'll love these even more!!!

Ok, enough just talking about them, lets jump right in and make them.

You will need:
1 1/2 pounds of ground beef
(90/10 fat percentage)

2 cans of Ricos Gourmet Nacho Cheese Dip

2 cups shredded 
Mexican Blend Cheese

1 package of taco seasoning

1 large can of refried beans

1/2 white onion

1 bushel of cilantro

4 roma tomatoes

1 lime

1 garlic clove
(or 2 tsp garlic powder)

2 tsp kosher salt
(regular salt is fine)

1 jalapeno (optional)

Lets begin...

First brown your meat. I like to add the taco seasoning at the same time and let it cook together, I also like to add hot sauce to mine.

It cooks really finely, and give it a superb flavor. After its brown, set the heat on low and just let it soak in the flavors.

Next, empty your can of beans into a skillet and add about 1/4 cup of water. 
  Every brand is different and you might need more if its really thick. Just slowly add the water and stir each time to see if its slightly runny. I like mine to be the consistency of gravy. You want to be able to just pour the beans onto the nachos. Another idea, is to add hot sauce to it. I have done it in the past and it was super yummy but a little to hot for the kiddos.

This is what Ricos cheese dip looks like. Its about $2.50 a can but well worth it.


Place both cans into a microwavable bowl and add a little bit of water and stir, add more water to thin it out, to your liking.

Cover it with a paper towel and cook for about 3 minutes, stirring half way.




Dice your cilantro, onion and tomatoes, and squeeze half of a lime into the bowl, add about 2 tsp of kosher salt and a diced garlic clove. Or just add garlic salt and skip the salt and garlic clove.

Stir it all together and you have 
some yummy pico!



Lay your chips down first, and pour a generous amount of beans, then pour over the cheese, and then the beef.

Then add the Mexican Blend Cheese, Pico and sliced jalepeno and...
DIG IN!

Quick before the other snag yours!




Man, I am so hungry now, its 1 am though, off to eat few grapes and then to bed.

  2. Seriously. I don't think I ever want to eat anything else again other than these nachos. We have nachos for Sunday night "party" (basically, snack food on the floor in front of the TV) every other week or so. This week: these are SO up. ;) Pinned!
