Hamburger Sliders



I have been so busy, and only been able to post twice a week, eek!
What do I do? 
Well hopefully this week will be a little better. 
I am working from home this week because the kids are on Fall Break.
So, this means no getting up early to get ready, and no driving times, and less employee distractions.
Ahh, now I just get to listen to my kids fight, yay!

Anyway, I wanted to post an appetizer. It can be dinner too, but these are great for the soon approaching Holiday gatherings.

I am also going to to do a post on Holiday party appetizers, or as the french would say                   hors d'oeuvres. In our house we say " whore dee veers, lol. Did I say that?

Okay onto the sliders. I love making these!
You will need about 1 1/2 pound of ground beef, maybe more if you want more sliders.
A package of Hawaiian Rolls and some Chedder Cheese Slices.

Shape the ground beef into small round patties about palm size.
 Ok, larger if you have small palms.

I like to cook mine on my George Foreman Grill, 
its super fast and less mess, but you can also cook them in a pan.





Keep Checking on them, and even though they may look done like this,
 it probably needs to cook a little longer. Unless you like bloody burgers.


Fold the slices into fours, and place two pieces onto each burger.

Put the pieces onto the sliders right after they come off the grill.

Then place each one into s Hawaiian Roll.
If you haven't had one of these before, you'll love it.
They have a wonderful sweet taste, and they are so soft.
These are the perfect size for these sliders.

We ate these for Dinner, so naturally some curly fries go great with them.

If you like burgers, you'll love these. I like to add a little mayo, or when I'm dieting a little bit of fat free hone mustard. Um, so good!

Rock Turkey Thanksgiving Decor, for your not so Ordinary Thanksgiving Dinner


Haven't you heard about Tailgating Thanksgiving?
Well surely some where, some one has done this?
They just didn't blab about it like I'm gonna do, lol.

This weekend we had a blast, and may have started a new family tradition.

We got together with our family for a Thanksgiving Camping Trip.

The Menu for Saturday Night was... Thanksgiving Dinner.

So naturally we had to make some table centerpieces from our lovely trip.

My mom brought some paint, feathers and some other fun things to decorate with.

In past camping trips with my mom, we have painted rocks, kinda an old tradition. My Grandmother is an artist, and she collected rocks and painted them. Her rocks have been found all over the United States here and there in Antique Shops/Malls. Its neat to find them and as tempted as we have been to purchase them, we let them sit there for another soul to find them to bring joy to their lives. Hey we've got her better paintings and rocks.

When I was in my 20's my mom started the painting rocks tradition and my kids now love this tradition.

So when she came up with the idea of painting the rocks like turkeys, we were all on board.

My mom and cousin thought of the idea of incorporating the pine cones as well for their heads, they found the rocks and the pine cones at the park we stayed in.


We all made very unique ones as you can see. Mine is the bottom right corner.

For dinner, well... no one was smart enough to bring extra tables, except my cousin. So how in the heck would we all be able to sit together to eat, and have room for the food?

Tailgating style of course, duh. LOL!!!


The leaves in that were already in the bed of the truck just made it feel more like a Thanksgiving dinner, lol.

We ended up calling it our Redneck Thanksgiving!
No matter how red our necks are though, the dinner was fabulous!


And what's a Thanksgiving without some football, games and lounging around?

Easy and oh So delicious Quesadillas


Hello all! I hope your weekend was great! Me, well its was ok. Friday night my 8 year old daughter had a friend spend the night, and my son had a friend stay till 9pm. 

Saturday, her friend thankfully left early, but it wasn't before long before another friend was coming over. Sunday my kids both had friends over. So I have felt like I have been in the kid zone all weekend long. I have never been so happy to get out and go to the grocery store today. Now isn't that just sad?

But while I had to listen to the sounds of machine guns on the x box, and girls running around screaming, I tried my best to just tune them out and I knitted pretty much the whole entire weekend. 
Ok, wait I take that back, I did do a 1 hour photo shoot Saturday afternoon, but then it was back home to fix dinner, work on the editing of the photos and then back to knitting. Awe, what an exciting weekend I had.

Ok, enough already, lets get to reason you stopped by... my mouth watering Quesadillas!

You will need two cooked  and chopped chicken breast.

3 cups of Cheddar Jack Cheese


2 cans of  rotel or mild diced tomatoes with green chilies



and a package of 10 large/burrito tortillas.

Lay you chicken on your tortilla.


Add a generous amount of cheese and rotel.


I use this handy quesadilla maker by Rivel.


Put the tortilla with the ingredients down first and then the top tortilla.


And cook it until the corners outer rim turns brown, and in this case when your patterns/lines are brown.

Don't have a quesadilla maker? No worries, I have also used the soft taco size tortillas and put the ingredients on  half of the tortilla then fold it, and put it in a sandwich presser or George Forman grill. If you don't have any of those then a large skillet will also do the trick just add a little bit of oil to you pan to prevent sticking, and press the two tortillas together with a spatula, and then carefully flip when it appears the cheese is completely melted.


Add some hot salsa and some sour cream, and aye yi yi, wonderful!!!
